Grilled Chicken and Poultry Recipes

Chicken cooks best with two heat zones, and the Arteflame gives you both without extra setup. The flat steel cooktop is hottest near the center fire and cooler toward the outer edge. Sear skin-side down close to the heat, then move pieces outward to cook through without burning.

Thighs and wings handle high heat well. Breasts cook more evenly if you pound them to an even thickness first. Whole and spatchcocked birds do well on the grill grate over the fire when you turn them often. This page also covers turkey, duck, quail and other birds.

Familiar cuts and dishes come first in each group. USDA lists 165°F as the safe minimum for all poultry, including ground chicken and turkey. Measure in the thickest part, away from bone. See our internal temperature chart for every cut.
