Introduction:

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil

  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese

  • 4 large flour tortillas

Add the Chicken: Add the diced chicken to the flat griddle cooktop, cooking until browned and cooked through, about 6-8 minutes.  Note: you can also grill the uncut chicken breasts by quickly searing them on the center grill grate, then finishing them off on the griddle cooktop.  Once done, cut the breasts to pieces.  This method gives a better sear.
  4. Season the Chicken: Add the taco seasoning and water to the chicken, stirring to combine. Simmer for 2-3 minutes until the sauce thickens.
  5. Prepare the Burritos: Lay out the flour tortillas on a flat surface. Evenly distribute the chicken mixture, black beans, rice, shredded cheddar cheese, salsa, and sour cream onto each tortilla.
  6. Roll the Burritos: Fold in the sides of each tortilla and roll them up tightly into burritos.
  7. Grill the Burritos: Place the burritos on the grill seam-side down. Grill for 2-3 minutes per side, or until the tortillas are crispy and have grill marks.
  8. Serve: Remove the burritos from the grill and let them cool for a minute. Garnish with chopped fresh cilantro and your choice of optional toppings. Serve with lime wedges on the side.
