Grilled Lamb Recipes

Lamb has a rich flavor that stands up to wood smoke and bold marinades. Lamb chops and rack of lamb sear quickly near the center of the Arteflame cooktop. Slide them to the cooler outer edge to finish at the doneness you like.

Leg of lamb and lamb shoulder do better with slower heat and a longer cook. Lamb kofta and kebabs brown evenly on the flat steel, and the rendered fat helps them crisp. A last section covers venison, goat and other game, which is lean and cooks fast.

Familiar cuts come first in each group. USDA lists 145°F with a 3-minute rest for whole cuts of lamb, and 160°F for ground lamb. The same numbers apply to venison and other red game meat. See our internal temperature chart for doneness levels.
