Grilled Pork Recipes

Pork has enough fat to handle a hot flat top, and it takes on wood smoke well. Chops and tenderloin sear fast near the center of the Arteflame cooktop. Move them toward the cooler outer edge to finish so the outside does not dry out.

Ribs, shoulder and belly need a slower pace. Cook them over lower heat, or start them on the grate and finish on the steel to crisp the fat. Bacon and pork belly render on the cooktop, and that fat is good for frying potatoes or eggs right next to them.

Familiar cuts and dishes come first in each group. USDA lists 145°F with a 3-minute rest for whole cuts of pork, such as chops, loin and tenderloin. Ground pork needs 160°F. Ribs and shoulder are safe at 145°F but are usually cooked longer, until tender. See our internal temperature chart.
