Grilled Burgers, Sandwiches and Sausages

Burgers, sandwiches and sausages are an easy way to start cooking on a flat top grill. The steel cooktop gives a patty a crust across its whole surface. Smash burgers need that flat surface to work at all.

Buns and bread toast on the cooler outer edge while the meat cooks near the fire. Onions and peppers soften in the drippings next to it. Sausages and hot dogs brown evenly on the steel, then can move over the grate for a little char. This page also covers melts, subs, po' boys and other grilled sandwiches.

Familiar cuts and dishes come first in each group. USDA lists 160°F as the safe minimum for ground beef, pork and lamb, including fresh sausages. Ground chicken and turkey need 165°F. Reheat hot dogs and precooked sausages to 165°F. See our internal temperature chart.
