Start by firing up your Arteflame grill to get it ready for grilling. Ensure the flat cooktop is clean and lightly buttered to prevent sticking.
In a small bowl, mix together the honey, brown sugar, Dijon mustard, black pepper, and cayenne pepper (if using) until well combined.
Lay the bacon strips flat on the hot part of the griddle. Cook until the bacon starts to crisp up, about 5-7 minutes per side, depending on thickness. Flip the bacon halfway through to ensure even cooking.
NOTE: If you're grilling a lot of bacon, there will be a lot of grease. Make sure your Arteflame is perfectly leveled so all the grease flows to the center and into the fire.
