In a small bowl, whisk together the olive oil, lemon juice, minced garlic, soy sauce, honey, Dijon mustard, fresh parsley, smoked paprika, salt, and black pepper until well combined.
Place the cod fillets in a resealable plastic bag or shallow dish. Pour the marinade over the cod, ensuring each fillet is fully coated. Seal the bag or cover the dish and refrigerate for 20-30 minutes. Avoid marinating for too long, as the acid in the lemon juice can start to break down the delicate fish.
