Helicopter Mom Hotdogs are an over-the-top, fully loaded take on the classic hotdog. Light your Arteflame grill by placing vegetable oil-soaked napkins under stacked firewood and let it burn for about 20 minutes. The center grate will give the hotdogs a perfect char, while the outer flat top can be used to crisp the bacon and toast the buns.
Lay the bacon strips on the outer flat top griddle and grill until crispy, about 5-7 minutes. Flip halfway through for even cooking. Once done, set the bacon aside on paper towels to drain excess grease.
Place the hotdogs on the hot center grate and grill for about 4-5 minutes, turning occasionally, until they are nicely charred and heated through.
Butter the inside of the hotdog buns and place them on the flat top griddle for 1-2 minutes until golden and slightly crispy.
Place each grilled hotdog in a toasted bun. Top with a generous spoonful of mac and cheese, a sprinkle of shredded cheddar cheese, crispy bacon strips, and a handful of fried onions. Drizzle with ketchup and mustard, and add pickle slices if desired.
