Classic Eggnog Recipe

Eggnog is a traditional holiday beverage that is rich, creamy, and perfect for festive gatherings. This classic recipe combines eggs, milk, cream, sugar, and a touch of nutmeg to create a delicious and comforting drink.

Ingredients

  • 6 large eggs, separated
  • 3/4 cup granulated sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup bourbon (optional)
  • 1/2 cup rum (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • Pinch of salt
  • Ground cinnamon and nutmeg for garnish

Instructions

Step 1: Prepare the Egg Yolks

  1. In a medium bowl, beat the egg yolks until they lighten in color.
  2. Gradually add the sugar, continuing to beat until fully incorporated and dissolved.

Step 2: Combine the Liquids

  1. In a large saucepan, combine the milk, cream, and nutmeg. Bring to a gentle simmer, stirring occasionally.  If you have the optional Arteflame Grill Grate Riser, use this and bring the eggnog to a simmer directly on the center grill grate.  This will add a lovely smokey flavor to the eggnog.
  2. Slowly add the hot milk mixture to the egg yolk mixture, whisking constantly to temper the eggs.

Step 3: Cook the Mixture

  1. Cook over medium heat, stirring constantly, until the mixture thickens and reaches 160°F (71°C). Do not boil.
  2. Remove from heat and stir in the bourbon, rum, vanilla extract, and a pinch of salt.

Step 4: Beat the Egg Whites

  1. In a separate bowl, beat the egg whites until soft peaks form.
  2. Gradually add a tablespoon of sugar and continue to beat until stiff peaks form.

Step 5: Combine and Chill

  1. Gently fold the egg whites into the eggnog mixture until well combined.
  2. Cover and refrigerate for at least 2 hours, or until thoroughly chilled.

Step 6: Serve

  1. Serve the eggnog in glasses, garnished with a sprinkle of ground cinnamon and nutmeg.
  2. Optionally, add a cinnamon stick for a festive touch.

Tips

  • Non-Alcoholic Version: Simply omit the bourbon and rum for a delicious non-alcoholic eggnog.
  • Thicker Eggnog: Use more heavy cream and less milk for a thicker, richer eggnog.
  • Spices: Feel free to add more spices like cinnamon or cloves to suit your taste.

Conclusion

This classic eggnog recipe is a holiday favorite that brings warmth and cheer to any festive gathering. Its creamy texture and rich flavor make it a perfect treat for the holiday season.

Variations

  1. Vanilla Eggnog: Add a split vanilla bean to the milk mixture for a more pronounced vanilla flavor.
  2. Chocolate Eggnog: Stir in 1/4 cup of melted dark chocolate to the mixture for a chocolatey twist.
  3. Coconut Eggnog: Replace the milk with coconut milk and the cream with coconut cream for a tropical variation.
  4. Pumpkin Spice Eggnog: Add 1/2 cup of pumpkin puree and a teaspoon of pumpkin pie spice to the mixture.
