Mesquite-seasoned pork chops are packed with smoky, bold flavors, making them a perfect choice for grilling on the Arteflame. In a small bowl, combine all the ingredients for the homemade mesquite seasoning. Mix well and set aside.
Pat the pork chops dry with paper towels. Rub both sides of each chop with olive oil to help the seasoning adhere. In a small bowl, combine the mesquite seasoning, garlic powder, onion powder, smoked paprika, ground cumin, black pepper, and kosher salt. Sprinkle the seasoning mixture evenly over both sides of the pork chops, pressing it in to ensure it sticks.
Set up your Arteflame grill for direct grilling by building a medium-hot fire. Allow the grill to heat up until the cooktop is hot and ready for searing.
Place the seasoned pork chops on the hot center of the Arteflame grill. Sear the chops for 4-5 minutes on each side, or until they develop a deep, golden-brown crust.
After searing, move the pork chops to the cooler outer edge of the grill to finish cooking. Grill the chops for an additional 4-6 minutes per side, depending on thickness, until the internal temperature reaches 145°F (63°C) for medium-rare or 160°F (71°C) for well done.
