Breakfast Chorizo Sausage Egg Nachos on the grill
Nachos round about 6-8 pieces per serving
1/4 cup corn
1/4 cup refried beans
1 slice of chorizo sliced open face
1 egg scrambled on the grill
Salt and pepper to taste
Yogurt or sour creme
Fresh cilantro optional
Fire up the Arteflame grill or your Arteflame grill griddle insert. When the temperature reaches between 400 and 450, wipe the cooktop with a bit of cooking oil and you’re ready to go.
Place nachos on the grill overlapping them slightly. Allow nachos to get warm. If they burn a bit on the sides that is OK, they are wonderful!
Place chorizo sausage directly onto the grill cutting it into pieces and cooking thru until no longer pink. Add egg and use spatula or tongs to break yolk and scramble. Add salt and pepper to taste.
When nachos are warm and chorizo is cooked thru, place corn, refried beans, and egg on top of nachos. Add chorizo and sriracha sauce.
Layer with sour cream or yogurt and cilantro.
