Ingredients
2 Bison ribeye steaks, 1.5 inches thick
2 tbsp unsalted butter, room temperature
Salt and freshly cracked black pepper, to taste
2 sprigs fresh thyme
2 cloves garlic, smashed
Applewood chunks (preferably from Washington apples)
3 paper napkins
1 tbsp vegetable oil (for lighting grill)

Step 2: Prepare the Steaks
