  • 1 loaf ciabatta bread, cubed (preferably stale)
  • 16 oz cubed pancetta
  • 1 stick unsalted butter
  • 3 stalks celery, chopped
  • 2 large carrots, chopped
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 1 jar chestnuts in water, drained and chopped
  • 2 sprigs each of rosemary and parsley, chopped (no stems)
  • 1.5 cups chicken stock
  • 1 large egg, beaten
  • 1 cup Parmesan cheese
  • Sea salt and pepper to taste

Instructions:

  1. Prepare the Arteflame Grill: Preheat your Arteflame grill, aiming for a medium-hot section for even cooking.

  2. Cook the Pancetta: In a large cast iron skillet with a lid, melt butter over the grill. Add cubed pancetta and cook until browned, then remove with a slotted spoon to keep the fat in the skillet.

  3. Sauté Vegetables: Add garlic and onion to the skillet, cooking until translucent. Incorporate carrots, celery, chestnuts, salt, pepper, and herbs, stirring occasionally until vegetables soften.

  4. Combine Ingredients: Return the pancetta to the skillet. Mix in the ciabatta cubes, then evenly pour the chicken stock mixed with the beaten egg over the bread. Sprinkle in Parmesan cheese and toss to coat.
