Ingredients

  • 2 lbs baby potatoes (red or yellow), halved
  • 1/4 cup olive oil
  • 2 tablespoons ranch dressing mix (store-bought or homemade)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh chives for garnish (optional)
  • Ranch dressing for dipping (optional)

Instructions

Preparing the Grill

  1. Fire up the grill: Preheat your Arteflame grill to get it ready for grilling. Ensure the center grill grate reaches over 1,000°F for optimal searing.

Preparing the Potatoes

  1. Parboil the potatoes: Place the halved potatoes in a large pot of salted water and bring to a boil. Cook for about 8-10 minutes until they are just tender. Drain and let cool slightly.  Alternatively, you can microwave them as well.
  2. Season the potatoes: In a large bowl, toss the parboiled potatoes with olive oil, ranch dressing mix, garlic powder, smoked paprika, salt, and pepper. Ensure all the potatoes are evenly coated with the seasoning.

Grilling the Potatoes

  1. Grill the potatoes: Place the seasoned potatoes cut side down on the flat cooktop griddle of the Arteflame grill. Cook for about 10-12 minutes, turning occasionally, until they are golden brown and crispy on the outside.  Fpr extra searing, use the center grill grate.
  2. Finish with parsley: Once the potatoes are cooked, sprinkle them with fresh parsley and toss to coat.

Serving

  1. Serve hot: Transfer the grilled potatoes to a serving platter.
  2. Garnish: Garnish with fresh chives if desired, and serve with a side of ranch dressing for dipping.
