Swedish köttbullar are traditional meatballs, known for their rich and comforting flavor. Today, we’re giving this classic a modern twist by grilling them on the Arteflame grill for an incredible sear. The high heat of the center grate combined with the griddle’s even temperature control ensures perfectly juicy, flavorful meatballs.
Start by lighting your Arteflame grill. Stack firewood over vegetable oil-soaked napkins in the center and light it. Wait about 20 minutes for the grill to heat up. You'll use the center grate for searing and the outer flat top cooktop for finishing the köttbullar.
In a large mixing bowl, combine the ground beef, ground pork, diced onion, minced garlic, breadcrumbs, egg, milk, allspice, nutmeg, salt, and pepper. Mix everything until evenly combined, but avoid overmixing to keep the meatballs tender.
Roll the meat mixture into 1-inch balls. Add a pat of butter to the flat cooktop as it melts, letting the meatballs sizzle. Sear the meatballs on the center grate for about 2-3 minutes per side, until golden brown. Once they have a nice crust, move them to the cooler area of the flat top to finish cooking. Cook until the internal temperature reaches 160°F (but pull them off the grill at 145°F since they will continue to cook off the heat).
While the meatballs finish cooking, use the outer edge of the Arteflame flat top to melt butter. Stir in the flour, cooking until slightly browned. Gradually whisk in the beef broth, cream, and soy sauce. Cook until the sauce thickens, then season with salt and pepper.
Plate the köttbullar and drizzle with gravy, or serve on the side. Garnish with fresh parsley and enjoy these delicious Swedish meatballs with mashed potatoes, lingonberry jam, or buttered egg noodles for an authentic touch.
