
Albanian Grilled Kale and Spinach on Arteflame

Grilled meatloaf on the Arteflame grill brings a smoky, charred flavor to this comfort food classic. The grill allows you to lock in the juices and get a beautifully caramelized crust while keeping the inside moist and tender. Perfect for a hearty dinner or for leftovers throughout the week!
In a small bowl, combine ketchup, brown sugar, Dijon mustard, and apple cider vinegar. Stir well and set aside.
In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, diced onion, garlic, parsley, eggs, Worcestershire sauce, salt, and pepper. Mix gently until all ingredients are incorporated. Avoid overmixing for a tender texture.
Shape the meat mixture into a loaf, about 8-10 inches long, and place on a piece of heavy-duty foil. Fold the foil up around the edges, leaving the top exposed to allow the meatloaf to caramelize.
Hint: You can also shape the meatloaf into a thinner round or square shape. This way you can grill one side, flip it over and cook the other side. I like doing it this way because you can get a great crunchy sear on both sides!
Light the Arteflame grill with vegetable oil-soaked napkins and firewood. Let it preheat for about 20 minutes until the center grate is very hot for an initial sear, and the surrounding cooktop is at medium heat.
Optional: If you have the Arteflame Pizza Oven, you can use it for this recipe. When using the pizza oven, make sure you don't make the shape of the meatloaf too tall so it fits into the oven nicely.
Place the foil-wrapped meatloaf on the flat cooktop of the Arteflame grill. Sear the edges for about 3-5 minutes each by rotating the meatloaf on its sides. Once seared, move it to the cooler part of the grill to cook through, about 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
During the last 10 minutes of grilling, brush the glaze generously over the top and sides of the meatloaf, letting it caramelize.
Once cooked, remove the meatloaf from the grill and let it rest for about 10 minutes before slicing. Serve with mashed potatoes, grilled veggies, or a simple side salad.
