Introduction

This complete Thanksgiving feast uses the versatility of the Arteflame grill to bring out the best flavors in each dish. The spatchcock turkey cooks quickly and evenly with a crispy skin, while side dishes like maple bacon Brussels sprouts, cinnamon-spiced sweet potatoes, and charred green beans bring warm, holiday-inspired flavors. Each dish complements the others for a beautiful Thanksgiving spread cooked entirely on the grill.


Main Dish: Spatchcock Thanksgiving Turkey

Ingredients

  • 1 whole turkey (12-14 lbs), spatchcocked
  • 1/2 cup butter, softened
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh sage, chopped
  • 1 lemon, zested and juiced
  • Salt and pepper, to taste
  • Optional: olive oil for extra crispiness

Instructions

  1. Prepare the Arteflame Grill
    Light the grill with three vegetable oil-soaked paper napkins and stacked firewood. Let it heat for about 20 minutes.

  2. Prepare the Turkey

    • Pat the turkey dry, and mix softened butter with garlic, herbs, lemon zest, and juice, salt, and pepper.
    • Rub some of the mixture under the skin and over the entire bird.
    • Place the turkey skin-side down on the grill grate, sear for 5-7 minutes, then flip to the cooktop's outer area.
    • Grill until the breast reaches 160°F and thigh 175°F (about 90 minutes). Remove and rest before carving.

Side Dish: Maple Bacon Brussels Sprouts

Ingredients

  • 1 lb Brussels sprouts, halved
  • 4 strips of thick-cut bacon, diced
  • 2 tbsp maple syrup
  • 2 tbsp butter, melted
  • Salt and pepper, to taste

Instructions

  1. Cook the Bacon

    • Dice and cook bacon on the medium-hot area until crispy. Remove bacon, leaving drippings.
  2. Grill the Brussels Sprouts

    • Add Brussels sprouts, season with salt and pepper, and grill until charred (10-15 mins).
    • Add maple syrup and bacon, cook for another 2-3 minutes. Serve hot.

Side Dish: Cinnamon-Spiced Sweet Potatoes

Ingredients

  • 3 large sweet potatoes, sliced into 1/4-inch rounds
  • 2 tbsp butter, melted
  • 1 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • Salt, to taste

Instructions

  1. Season the Sweet Potatoes

    • Mix butter, maple syrup, cinnamon, nutmeg, and salt. Brush over potato slices.

  • 1 lb fresh green beans, trimmed
  • 2 tbsp butter, melted
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Juice of 1 lemon

Instructions

  1. Grill the Green Beans
    • Place green beans on the medium-heat section, drizzle with butter, and sprinkle garlic, salt, and pepper.
    • Grill for 6-8 minutes, stirring, until tender-crisp. Squeeze lemon juice over before serving.

Side Dish: Grilled Cornbread with Maple Butter

Ingredients

  • 6 slices of cornbread
  • 2 tbsp butter, melted
  • 2 tbsp maple syrup

Instructions

  1. Grill the Cornbread
    • Brush with melted butter and place on the outer cooktop. Grill each side for 2-3 minutes until lightly charred.
    • Drizzle with maple syrup before serving.
