2 Long Island duck breasts, skin-on
1 tbsp kosher salt
1 tsp freshly ground black pepper
1 tbsp unsalted butter
1/2 cup red wine
1/3 cup fresh or frozen cherries (pitted)
1 tbsp honey
1 tsp balsamic vinegar
Fresh thyme sprigs (optional)
