Ingredients
2 whole trout, cleaned and gutted (about 1 lb each)
3 tablespoons New Mexico red chile powder
3 cloves garlic, minced
1 tablespoon apple cider vinegar
1 tablespoon fresh lime juice
1 tablespoon smoked paprika
1 teaspoon ground cumin
1 teaspoon Mexican oregano
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons melted butter (for grilling)
Fresh cilantro and lime wedges for garnish
