2 lbs ground beef (80/20)
4 pretzel buns or brioche buns
4 poblano peppers
4 slices pepper jack cheese or cheddar
2 tablespoons unsalted butter
1 tablespoon garlic powder
1 tablespoon smoked paprika
Salt and freshly ground black pepper to taste
Optional toppings: sliced red onion, avocado, chipotle mayo, lettuce
