Ingredients:
For the Crust:
- 1 cup whole wheat flour
- 1 tsp. kosher salt
- 1 cup all-purpose flour, plus more for surface
- 10 Tbsp. chilled unsalted butter, cut into pieces
For the Filling and Assembly:
- 4 Tbsp. extra-virgin olive oil, divided
- 4 medium yellow onions, thinly sliced
- Kosher salt
- 3 garlic cloves, thinly sliced
- 2 Tbsp. Dijon mustard
- Pinch of cayenne pepper
- 4 oz. sharp cheddar or Gruyère, coarsely grated
- ½ small butternut squash, halved lengthwise, seeds removed
- 1 delicata squash, halved lengthwise, seeds removed
- 1 small sweet potato
- 1 small red onion
- 2 sprigs thyme
- 2 Tbsp. unsalted butter
- Flaky sea salt
Special Equipment:
- 11"- or 12"-diameter fluted tart pan with removable bottom or a 9"-diameter springform pan

Prepare the Crust:
- Whisk together whole wheat flour, salt, and 1 cup all-purpose flour in a large bowl. Add butter and work into the dry ingredients until the largest pieces are nickel-sized.
- Drizzle in 6 Tbsp. ice water, mixing with your fingers. Gently squeeze together until a shaggy dough forms. Knead until a few dry spots remain.
- Pat into a disk, wrap in plastic, and chill for at least 2 hours.

Roll and Prep the Crust:
- Roll out the dough on a lightly floured surface to ⅛" thick. Transfer to the tart pan, press into corners, and trim excess. Freeze for 15–20 minutes.

- Heat oil on the Arteflame side plancha. Add yellow onions, season with salt, and cook until caramelized, about 45–50 minutes total. Let cool.

- Brush mustard over chilled dough and sprinkle with cayenne. Mix cheese into onion mixture and spread over crust.
- Thinly slice squashes and sweet potato. Arrange in concentric circles on the tart, drizzle with oil, and season with salt.
