Ingredients:
For the Brined Wings (Optional):
- 1/2 cup kosher salt
- 3 tablespoons light brown sugar
- 2 garlic cloves, smashed
- 1 teaspoon whole black peppercorns
- 1 bay leaf
- 3 pounds chicken wings, tips discarded and wings split
- Water as needed for the brine
For the Dry Rub:
- 1/4 cup dark brown sugar
- 1/4 cup granulated sugar
- 1/4 cup sweet paprika
- 1 tablespoon kosher salt
- 1 tablespoon granulated onion
- 3/4 tablespoon black pepper
- 1/2 tablespoon dry sage
- 1/2 tablespoon dry mustard
- 1/2 tablespoon ground ginger
- 1/2 tablespoon cayenne pepper
- Canola oil for brushing
- Lime wedges for serving (optional)
