Start by getting your Arteflame grill ready. Pour some vegetable oil on three paper napkins, place them in the grill, and stack your firewood over top. Light the grill and let it heat up for about 20 minutes. You want the center grill grate hot enough to sear the bratwurst, while the surrounding flat cooktop heats up for the veggies.
While the grill heats up, slice the onions and bell peppers. Melt 2 tablespoons of butter in a small bowl and mix in the mustard, beer, and caraway seeds (if using). This will be used to baste the veggies as they cook.
Once the center grate is scorching hot (around 1000°F), place the bratwurst directly over the heat for a quick sear. Turn them every minute until all sides are browned, about 4-5 minutes total. Let the bratwurst cook through on the flat cooktop, turning occasionally, until they reach an internal temperature of 160°F. Remove them from the grill when they hit about 145°F, as they’ll continue to cook off the heat.
While the brats are resting, lightly toast the pretzel buns on the cooler outer edge of the flat top. This should only take a minute or two.
Place each bratwurst in a toasted pretzel bun. Top with the grilled onions and peppers, and add a spoonful of sauerkraut if desired. Finish with a drizzle of mustard, and serve immediately.
