Introduction:

Ingredients:

  • 2 racks of baby back ribs
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup BBQ sauce
  • Aluminum foil

Instructions:

  1. Preheat your Arteflame grill to medium-low heat.
  2. In a small pan, mix the olive oil, garlic, paprika, brown sugar, salt, black pepper, and cayenne pepper (if using) to create a rub.
  3. Remove the membrane from the back of the ribs and pat them dry with paper towels.
  4. Rub the olive oil mixture all over the ribs, ensuring they are evenly coated.
  5. Move the charcoal and wood to one inside of the grill.
  6. Wrap the ribs in aluminum foil and place the ribs inside the grill away from the charcoal or wood so they heat up through indirect heat.  Cook for 3 hours or until the internal temperature reaches 165°F to tenderize the ribs and bring them up to temperature.
  7. Then place the ribs on the flat griddle cooktop and give them a nice sear.  Turn the ribs and keep basting them with BBQ sauce. 
  8. Place the pan with the rub / BBQ sauce on the flat cooktop to warm it up.
  9. Remove the ribs from the grill when they are tender and the internal temperature reaches 190°F.
  10. Let the ribs rest for 10 minutes before slicing and serving.

Tips:

  • For extra flavor, marinate the ribs in the rub overnight.
  • Use a meat thermometer to ensure the ribs are cooked to perfection.
  • Serve the grilled ribs with extra BBQ sauce on the side and a fresh coleslaw for a complete meal.
