Kibbeling is a popular Dutch street food consisting of battered and fried fish bites, often served with a tangy dipping sauce. Instead of frying, we’re grilling these fish bites on the Arteflame to give them a healthier, smoky twist while keeping them juicy and flavorful. Paired with a creamy garlic dipping sauce, grilled kibbeling makes a perfect appetizer or light meal.
Light your Arteflame grill by placing vegetable oil-soaked napkins at the bottom and stacking firewood over them. Light the napkins and let the fire burn for about 20 minutes. You’ll use the flat griddle to grill the kibbeling for a crispy exterior and tender fish.
In a bowl, whisk together the flour, baking powder, garlic powder, paprika, cumin, salt, and pepper. Add the egg and beer (or sparkling water) and whisk until the batter is smooth and slightly thick.
Melt butter on the flat cooktop. Dip each piece of fish into the batter, ensuring it’s evenly coated, and place it on the griddle. Grill each side for about 3-4 minutes until the batter is golden brown and crispy, and the fish is cooked through. The high heat of the grill will give the fish a nice crust without the need for deep frying.
In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, chopped parsley, salt, and pepper. Stir until well combined.
Serve the grilled kibbeling hot with the garlic dipping sauce on the side. Garnish with lemon wedges and fresh parsley for added freshness.
