Fettuccine Alfredo Grilled on the Arteflame Grill

Ingredients

For the Alfredo Sauce:

  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup unsalted butter
  • 2 cloves garlic, minced
  • Salt and black pepper to taste

For the Fettuccine:

  • 1 lb fettuccine pasta
  • 2 tbsp olive oil
  • Salt for boiling water

For the Grilled Chicken (Optional):

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste

Garnish:

  • Fresh parsley, chopped
  • Extra grated Parmesan cheese

Instructions

Preparation

  1. Cook the Fettuccine: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to the package instructions until al dente. Drain and set aside.

Preparing the Alfredo Sauce

  1. Heat the Sauce Ingredients: Put a large skillet on the flat cooktop and melt the unsalted butter. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add the Cream: Pour in the heavy cream and bring it to a simmer. Use a low heat area of the cooktop and continue to cook, stirring occasionally, for about 5 minutes.
  3. Incorporate the Cheese: Gradually add the grated Parmesan cheese, stirring continuously until the cheese has melted and the sauce is smooth. Season with salt and black pepper to taste. Move to the outside edge of the cooktop to keep warm.

Grilling on the Arteflame Grill

  1. Preheat the Grill: Preheat your Arteflame grill and ensure the grill surface is clean and well-oiled.
  2. Prepare the Chicken: (Optional) Brush the chicken breasts with olive oil and season with garlic powder, onion powder, salt, and black pepper. Place the chicken on the center grill grate for a quick sear.  Once seared, move the chicken to the flat cooktop.  Cook for about 5-6 minutes on each side, or until fully cooked and the internal temperature reaches 150°F (74°C). Remove from the grill, let rest for a few minutes, and then slice into strips.

Combining the Ingredients

  1. Grill the Fettuccine: Place the cooked fettuccine directly on the flat cooktop. Drizzle with olive oil and toss to coat. Cook, stirring occasionally, until the pasta is lightly charred and heated through, about 5 minutes.
  2. Add the Sauce: Pour the Alfredo sauce over the grilled fettuccine and toss to combine. Allow the sauce to coat the pasta evenly, warming for an additional 2-3 minutes on the grill.  Don't pour on all the sauce, only pour on enough to coat the fettuccini.

Serve

  1. Plate the Dish: Remove the pan from the grill. Serve the fettuccine Alfredo on plates, topping with the grilled chicken strips if using.  Pour the rest of the sauce over the fettuccine to taste.
  2. Garnish: Sprinkle with fresh chopped parsley and extra grated Parmesan cheese for added flavor and presentation.

Tips for Perfect Fettuccine Alfredo

  • Use Fresh Ingredients: Fresh Parmesan cheese and high-quality butter make a significant difference in the flavor of the Alfredo sauce.
  • Control the Heat: Keep the heat low when adding the Parmesan cheese to prevent it from clumping and ensure a smooth sauce.
  • Optional Add-Ins: Enhance the dish with grilled vegetables like bell peppers, mushrooms, or zucchini for added flavor and texture.
