Grilled Cheesy Italian Meatloaf combines classic Italian flavors with the melty goodness of cheese throughout. Stuffed with mozzarella and coated in a tangy marinara glaze, this meatloaf takes on a smoky, caramelized exterior when cooked on the Arteflame grill, creating a crowd-pleasing dish that's hearty and full of flavor.
In a small bowl, mix together the marinara sauce, balsamic vinegar, and tomato paste. Set aside.
In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, diced onion, garlic, eggs, Italian seasoning, salt, and black pepper. Mix gently until just combined.
On a piece of heavy-duty foil, shape the meat mixture into a large rectangle. Sprinkle the mozzarella over the center of the meat mixture. Fold the meat around the cheese to form a loaf, sealing the cheese inside. Wrap the edges of the foil up around the sides, leaving the top open.
Light the Arteflame grill using vegetable oil-soaked napkins and firewood. Preheat for about 20 minutes until the center grate is very hot and the surrounding cooktop reaches medium heat.
Place the foil-wrapped meatloaf on the flat cooktop. Sear each side for about 3-5 minutes, then move the meatloaf to a cooler part of the grill and cook for 45-55 minutes, until the internal temperature reaches 160°F (71°C).
During the last 10 minutes of grilling, brush the marinara glaze over the top and sides of the meatloaf. Add a sprinkle of mozzarella on top for an extra cheesy finish.
Let the meatloaf rest for 10 minutes before slicing. Garnish with fresh basil or parsley and serve with additional marinara if desired.
