Grilled Butternut Squash Steaks with Brown Butter Sage Sauce Recipe

Ingredients:
- 1 large butternut squash (about 3 lb.), preferably with a long thick neck
- 1 Tbsp. extra-virgin olive oil
- 2 Tbsp. unsalted butter, cut into pieces
- 6 sage leaves
- 2 garlic cloves, crushed
- 1 Tbsp. fresh lemon juice
- Kosher salt, to taste
- Freshly ground black pepper, to taste

Prepare the Squash:
- Cut the neck off the squash, reserving the base for another use.
- Remove the stem and peel the neck. Resting the neck on its cut base, cut it in half lengthwise to create two lobes. Trim the rounded sides to form two ¾"-thick steaks (about 6 oz. each). Reserve the trimmings for another use.

Grill the Squash Steaks:
- Preheat the Arteflame grill. Brush the squash steaks with olive oil.
- Grill each steak, turning every 3 minutes, until deeply browned on both sides and fork-tender, about 15 minutes total.

Make the Brown Butter Sage Sauce:
- Place a skillet on the Arteflame plancha and add butter, sage, and garlic.
- Tilt the pan to pool the butter on one side and continually baste the steaks with the butter using a large spoon.
- Continue basting until the butter stops bubbling, smells nutty, and begins to brown, about 1 minute.
- Remove from heat and stir in lemon juice. Season the sauce with salt and pepper.
