- 3-4 large artichokes
- 1 lemon, juiced
- 2 tsp champagne or white wine vinegar
- 1/3 cup olive oil
- Kosher salt and freshly cracked black pepper, to taste

Prepare the Vinaigrette: In a bowl, whisk together lemon juice, champagne vinegar, and olive oil. Season with salt and pepper to taste. Set aside.

Prep the Artichokes: Clean and trim the artichokes, cutting them in half and removing the choke.

Steam the Artichokes: In a large pot with a steaming basket, bring water to a boil. Ensure the water doesn't touch the bottom of the steaming basket. Place artichoke halves in the basket, exposed side down, and steam for about 25 minutes, or until you can easily pierce the heart with a knife.

Grill the Artichokes: After steaming, remove the artichokes from the water and brush them with some of the prepared vinaigrette. Transfer to your preheated Arteflame Grill and grill for 15 minutes, or until nicely charred.
