Aussie Wagyu Burger Recipe by Dave
Serves: 4
Ingredients:
- 4 slices bacon
- 4 eggs
- 1 lb ground Wagyu beef (or meat of choice)
- 4 oz sharp cheddar cheese, sliced
- 1 sweet onion, sliced into thick rings
- 4 pineapple rings, patted dry
- ¾ cup pickled beets, drained, sliced, and patted dry
- 1 tomato, sliced
- 4 lettuce leaves, washed and patted dry
- 4 hamburger buns
- Salt and pepper, to taste
For the Pickled Beets:
- 1 red beet (8 oz), scrubbed
- 1 ¼ cups distilled white vinegar
- ½ cup rice vinegar
- 2 tbsp sugar
For the Chili Mayo Sauce:
- ¼ cup ketchup
- ¼ cup mayonnaise
- 1 tsp hot sauce (Sriracha or your favorite)

Prepare the Pickled Beets:
- Boil the red beet until tender, let cool, then slice thinly.
- Combine distilled white vinegar, rice vinegar, and sugar in a pot and bring to a simmer. Pour over the sliced beets and let cool.

Make the Chili Mayo Sauce:
- In a small bowl, mix ketchup, mayonnaise, and hot sauce. Set aside.

Grill the Burgers:
- Season the Wagyu beef with salt and pepper and form into 4 patties.
- Grill the patties on medium-high heat until desired doneness. In the last minute of cooking, add a slice of cheddar cheese to each patty to melt.

Grill the Toppings:
- Grill the bacon, pineapple rings, and onion slices until nicely charred.

Cook the Eggs:
- Fry the eggs to your preference in a pan or on the grill.

Assemble the Burgers:
- Toast the hamburger buns on the grill.
- Spread chili mayo sauce on the buns, then layer with lettuce, tomato, grilled pineapple, Wagyu patty with cheese, bacon, pickled beets, grilled onion, and top with a fried egg.
