Biryani on the Arteflame Grill Recipe

Embrace the rich flavors of Indian cuisine by preparing Biryani on your Arteflame Grill. This recipe brings together aromatic spices, tender meat, and fluffy rice in a single dish, creating a smoky version of the classic Biryani.

Ingredients:
For the Marinade:
2 lbs chicken or lamb, cut into pieces
1 cup yogurt
2 tablespoons ginger-garlic paste
2 teaspoons turmeric powder
2 teaspoons garam masala
1 teaspoon chili powder
Salt to taste

For the Biryani:
2 cups Basmati rice, soaked for 30 minutes and drained
4 cups water
2 large onions, thinly sliced
2 tomatoes, chopped
1/4 cup cooking oil
A pinch of saffron, soaked in 1/4 cup warm milk
1/2 cup fresh cilantro, chopped
1/2 cup fresh mint leaves, chopped
4 green chilies, slit
Whole spices: 2 bay leaves, 4 cloves, 4 green cardamom pods, 2-inch cinnamon stick
Salt to taste

Instructions:
Marinate the Meat:
In a bowl, combine the meat with all the marinade ingredients. Mix well, cover, and refrigerate for at least 2 hours, preferably overnight.

Prepare the Arteflame Grill:
Fire up your Arteflame Grill.

Cook the Rice:
In a large pot on the Arteflame, bring water to a boil. Add soaked rice, cook until it's 70% done. Drain and set aside.

Fry the Onions:
Put some oil on the flat cooktop of the Arteflame. Add onions and fry until golden brown. Remove half for garnishing.
Searing the Meat:
Traditionally, the meat is cooked in the dish with all the other ingredients at the same time.  For additional flavor, try searing the meat before adding it.

Layer the Biryani:
In a skillet, layer half of the rice. Top with marinated meat, chopped tomatoes, green chilies, half of the fried onions, cilantro, mint, and whole spices. Cover with the remaining rice. Sprinkle over the saffron milk and the rest of the fried onions.

Cook the Biryani:
Cover the skillet tightly with foil or a lid. Allow to cook on low heat for 30-40 minutes until the meat is tender and the rice is fully cooked.

Serve:
Gently fluff and mix the Biryani before serving. Garnish with fresh cilantro, mint, and fried onions. Serve hot with raita or curry on the side.
