The Arteflame grill is my go-to for searing meat at over 1,000°F and grilling all my other food on the flat top griddle surrounding the center grill grate. This recipe for cheese fondue showcases the versatility of the Arteflame grill, providing a perfectly even sear without any grill marks and ensuring your food never burns.


  • 1 pound Gruyère cheese, grated
  • 1/2 pound Emmental cheese, grated
  • 1 clove garlic, halved
  • 1 cup dry white wine
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 3 tablespoons kirsch (cherry brandy)
  • Freshly ground black pepper to taste
  • Freshly grated nutmeg to taste
  • Assorted dipping items: cubed bread, blanched vegetables, cooked sausages, and apple slices


  1. Prepare the Fondue Pot: Rub the inside of a fondue pot or heatproof bowl with the cut sides of the garlic clove.
  2. Preheat the Grill: Fire up your Arteflame grill to medium-high heat to get it ready for grilling.
  3. Heat the Wine: Place the fondue pot on the flat top griddle of the Arteflame grill. Pour in the white wine and lemon juice, and heat until hot but not boiling.
  4. Add the Cheese: Gradually add the grated Gruyère and Emmental cheeses, stirring constantly until the cheese is melted and smooth.
  5. Thicken the Fondue: In a small bowl, mix the cornstarch with the kirsch until smooth. Stir this mixture into the melted cheese. Continue to cook, stirring, until thickened and bubbling. Season with black pepper and nutmeg.
  6. Serve: Eat the fondue directly from the cooktop or transfer the fondue pot to a portable burner or trivet on your table. Serve with assorted dipping items.
