Homemade McRib-Style Pork Sandwich

  • 1 lb ground pork (rib meat preferred)
  • 3 tbsp water
  • 1 tsp white sugar
  • ¾ tsp salt
  • 4 hoagie buns or homestyle rolls
  • 1 cup barbecue sauce
  • Dill pickle slices
  • ½ cup slivered white onion
  • Mayonnaise

  1. Preheat the Grill: Fire up your Arteflame grill to get it ready for grilling. To light the grill, use three sheets of paper kitchen towels soaked in cooking oil like avocado oil, Crisco, or olive oil. Place these into the grill and stack the wood on top. Light the grill, making the process simple, easy, and quick.
  2. Prepare Pork Patties: In a mixing bowl, combine ground pork, water, sugar, and salt. Mash together until fully integrated. Divide the mixture into four equal portions and form each into long rectangular shapes resembling the McRib patty.
  3. Freeze Patties: Arrange patties on a baking sheet lined with wax paper or nonstick foil. Cover with another sheet and press lightly. Freeze until solid.
  4. Toast Buns: Lightly spread mayonnaise on the inside of each bun. Toast on the Arteflame, mayo side down, until slightly crispy. Remove and set aside.
  5. Grill Patties: Place frozen pork patties directly on the center grill grate. Sear for 3-4 minutes on one side until they start to brown, then flip and cook the other side. Move the seared patties onto the flat cooktop to bring them up to the desired doneness.
  6. BBQ Sauce Glaze: After cooking, coat each patty generously in barbecue sauce. Return to the grill for another minute on each side. Dip once more in BBQ sauce for an extra layer of flavor.
  7. Assemble Sandwiches: Layer each bun with a patty, followed by slivered onions and dill pickle slices. Cap with the top of the bun.
