Whip up delicious Grilled Squash Pancakes topped with browned sage butter on your Arteflame Grill. Perfect as a savory breakfast or a delightful side dish.

15 minutes (once squash is cooked)

  • 1 cup roasted and mashed winter squash
  • 1/3 cup yogurt or sour cream
  • 2 large eggs
  • 1/2 cup finely grated Gruyere, Comte, or Parmesan
  • 3/4 teaspoon fine sea salt
  • Black pepper to taste
  • 1 teaspoon baking powder
  • 1 cup all-purpose flour
  • Butter or olive oil for frying
To Finish:
  • 2-3 tablespoons butter
  • Salt, to taste
  • Fresh sage leaves
  1. Prepare the Squash: Halve the squash (butternut or kabocha), scoop out seeds, and roast face-down on the Arteflame grill with some coarse salt at 375°F for 40-50 minutes until tender.

  2. Make the Batter: In a large bowl, whisk together mashed squash, yogurt, eggs, cheese, salt, pepper, and baking powder until smooth. Stir in flour just until combined.

  3. Cook the Pancakes: Heat the Arteflame grill. Drop heaped spoonfuls of batter onto the grill; flatten slightly. Cook until golden on both sides. Repeat with remaining batter.

  4. Finish with Sage Butter: Place butter, salt, and sage leaves on the grill. Cook until butter browns and sage crisps. Pour over pancakes before serving.
