Serves: 4 to 6

  • 1 large butternut squash, peeled, seeded, and cut into 1½-inch pieces
  • ¼ cup olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

    • In a large bowl, toss the butternut squash pieces with olive oil until well coated. Season generously with kosher salt and freshly ground pepper.
