Fire-Kissed Hoosier Burgers - Indiana Beef Burgers

Introduction

These Fire-Kissed Hoosier Burgers are made with Indiana-raised beef, simply seasoned and seared to perfection on the Arteflame grill. By using the high-heat center grill grate, we lock in juices before moving the beef patties to the outer flattop for the perfect doneness. Grilling on the Arteflame ensures an amazing sear with a deliciously juicy bite. Follow this method to make the best Indiana beef burgers that look and taste incredible.

Ingredients

  • 2 lbs Indiana-raised ground beef (80/20 blend)
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 4 brioche burger buns
  • 4 slices cheddar cheese
  • 2 tbsp unsalted butter
  • 1/2 cup sliced red onions
  • 1/2 cup sliced pickles
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce

Instructions

Step 1: Prepare the Arteflame Grill

  1. Pour vegetable oil on three paper napkins and place them in the grill.
  2. Stack firewood over the soaked napkins.
  3. Light the paper napkins and allow the grill to heat up for about 20 minutes.

Step 2: Form and Season the Burger Patties

  1. Divide the ground beef into four equal portions and form into patties.
  2. Lightly press the center of each patty to prevent bulging during grilling.
  3. Season both sides with kosher salt and freshly ground black pepper.

Step 3: Sear the Burger Patties

  1. Place each patty on the center grill grate for a high-temperature sear.
  2. Cook for about 1-2 minutes per side for a beautiful crust.
  3. Move the burgers to the flat cooktop to continue cooking to desired doneness.
  4. Remove the patties from the grill when they are about 15°F below the final target temperature.

Step 4: Toast the Buns and Melt the Cheese

  1. Spread butter on the cut sides of the brioche buns.
  2. Place the buns on the flat cooktop until golden brown.
  3. Place cheddar cheese on the burger patties and allow it to melt.

Step 5: Assemble the Burgers

  1. Mix mayonnaise, Dijon mustard, and Worcestershire sauce.
  2. Spread the sauce on the toasted buns.
  3. Place the lettuce, sliced red onions, and pickles on the bottom bun.
  4. Add the burger patty with melted cheese and place the top bun.

Tips

  • Ensure the grill is fully heated to get the best sear on the patties.
  • Butter adds richness and improves flavor—use it instead of oil.
  • Remove the patties at 15°F below target doneness; they will continue cooking.
  • Use a digital thermometer to check internal temps—125°F for medium-rare, 135°F for medium.
