Ingredients
1 rack St. Louis-style ribs
2 tbsp butter
1 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp black pepper
1 tsp salt
1/2 tsp cayenne pepper
1/2 cup Massachusetts maple syrup
2 tbsp apple cider vinegar
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce

Light the napkins and allow the fire to catch.
Wait about 20 minutes for the Arteflame grill to reach optimal grilling temperature.
Step 2: Prepare the ribs
Remove the membrane from the back of the ribs.
Mix smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper in a bowl.
Rub the spice mixture evenly over the ribs.
Step 3: Sear the ribs on the grill grate
Place the ribs on the center grill grate of the Arteflame at 1,000F.
Sear each side for 2 minutes to lock in the juices.
Move the seared ribs to the flat griddle cooktop.
Step 4: Prepare the maple glaze
In a small bowl, mix the Massachusetts maple syrup, apple cider vinegar, Dijon mustard, and Worcestershire sauce.
Step 5: Slow-grill the ribs
Place the ribs on the outer edge of the flat cooktop where the heat is lower.
Brush the ribs with the maple glaze every 10 minutes.
Grill for about 2 hours, turning and basting occasionally.
Step 6: Rest and serve
Remove the ribs when they reach an internal temperature of 195F.
Let the ribs rest for 15 minutes before slicing and serving.
