Introduction:

Fettuccine Alfredo is a rich, creamy classic that becomes even more indulgent with a hint of smokiness from the Arteflame grill. By preparing the sauce directly on the grill, you’ll achieve a velvety texture with a subtle depth of flavor.


Ingredients

  • 12 ounces fettuccine pasta
  • 2 cups heavy cream
  • 1/2 cup unsalted butter
  • 1 1/2 cups freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp nutmeg (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Cook the Fettuccine

  1. Bring a large pot of salted water to a boil on the Arteflame as it heats up.  Do not cover the center grill grate as this will choke the fire.  Use the optioanl Arteflame Grill Grate riser if possible.
  2. Add the fettuccine and cook until al dente according to package instructions.
  3. Reserve 1/2 cup of pasta water before draining. Set pasta aside and drizzle with olive oil to prevent sticking.

Step 2: Prepare the Arteflame Grill

  1. Light the Arteflame grill by soaking three paper napkins in vegetable oil, placing them under firewood, and lighting. Allow the grill to heat for about 20 minutes.
  2. Place a grill-safe saucepan or cast-iron skillet on the cooler outer zone of the grill.

Step 3: Make the Alfredo Sauce

  1. Melt the butter in the pan on the grill.
  2. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Pour in the heavy cream, stirring gently to combine.
  4. Gradually whisk in the grated Parmesan cheese, ensuring it melts completely into the sauce.
  5. Season with salt, black pepper, and nutmeg (if using). Let the sauce simmer gently for 3-5 minutes, stirring occasionally, until it thickens slightly.

Step 4: Combine the Pasta and Sauce

  1. Add the cooked fettuccine to the pan of Alfredo sauce.
