Smoky Grilled Chicken Alfredo Pasta

Introduction:

Chicken Alfredo is elevated to a whole new level when cooked on the Arteflame grill. The smoky, perfectly grilled chicken pairs beautifully with rich and creamy Alfredo sauce for a dish that’s both comforting and indulgent.

Ingredients

For the Grilled Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper

For the Alfredo Sauce:

  • 2 cups heavy cream
  • 1/2 cup unsalted butter
  • 1 1/2 cups freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp nutmeg (optional)
  • Fresh parsley, chopped (for garnish)

For the Pasta:

  • 12 ounces fettuccine or pasta of your choice
  • Salt, for boiling water

Instructions

Step 1: Prepare the Arteflame Grill

  1. Light the Arteflame grill using vegetable oil-soaked napkins under firewood. Allow the grill to heat for about 20 minutes.
  2. Lightly oil the flat cooktop to prevent sticking.

Step 2: Season and Grill the Chicken

  1. Brush the chicken breasts with olive oil and season with smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. Place the chicken on the medium-heat zone of the Arteflame grill.
  3. Cook for 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C).
  4. Move the chicken to the cooler zone to rest for 5 minutes, then slice into thin strips.

Step 3: Prepare the Alfredo Sauce

  1. In a grill-safe saucepan, melt the butter on the cooler outer zone of the grill.
  2. Stir in the minced garlic and cook for 1-2 minutes, until fragrant.
  3. Add the heavy cream, stirring continuously to combine with the butter.
  4. Gradually whisk in the Parmesan cheese, ensuring it melts evenly into the sauce.
  5. Season with salt, black pepper, and nutmeg (if using). Let the sauce simmer gently for 2-3 minutes, stirring occasionally.

Step 4: Cook the Pasta

  1. Bring a large pot of salted water to a boil on the Arteflame or indoor stove. NOTE: Do not place a large pot on the center grill grate, covering it completely as this will cause the fire to choke.  Instead, keep at least half of the grill grate uncovered or use the optional Arteflame Grill Grate Riser.
  2. Cook the pasta according to package instructions until al dente.
  3. Drain and toss the pasta with a drizzle of olive oil to prevent sticking.

Step 5: Combine and Serve

  1. Toss the cooked pasta in the Alfredo sauce until fully coated.
  2. Plate the pasta and top with slices of grilled chicken.
  3. Garnish with fresh parsley and additional Parmesan cheese.

Tips for Perfect Chicken Alfredo

  1. Even Cooking: Pound chicken breasts to an even thickness for uniform grilling.
  2. Fresh Ingredients: Use freshly grated Parmesan for a smoother sauce.
  3. Low Heat for Sauce: Keep the Alfredo sauce over low heat to prevent separation.

Variations

  1. Shrimp Alfredo: Substitute grilled shrimp for chicken.
  2. Vegetable Alfredo: Add grilled zucchini, mushrooms, or asparagus to the pasta.
  3. Spicy Alfredo: Add red pepper flakes to the sauce for a kick.
  4. Herbed Alfredo: Incorporate fresh basil or thyme for an aromatic twist.
  5. Gluten-Free Option: Use gluten-free pasta for dietary needs.

Pairings

  • Sides: Serve with garlic bread or a Caesar salad.
  • Drinks: Pair with a crisp white wine like Pinot Grigio or sparkling water with lemon.
  • Dessert: Finish with tiramisu or a fruit sorbet.

Conclusion

Arteflame Grilled Chicken Alfredo is a rich and smoky take on the classic dish. With perfectly grilled chicken and creamy Alfredo sauce, it’s a crowd-pleaser that’s easy to make and even easier to enjoy.
