Skillet Cornbread on the Arteflame Grill

Introduction

This Skillet Cornbread is a deliciously moist, golden-brown bread with a crisp edge and tender crumb, perfect for pairing with any holiday meal. Cooked on the Arteflame in a cast iron skillet, this cornbread gains a slightly smoky flavor, with butter adding richness to every bite.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup melted butter (plus extra for greasing)
  • Optional: 1/2 cup corn kernels or shredded cheddar cheese

Instructions

  1. Prepare the Arteflame Grill
    Light up the Arteflame grill by placing three vegetable oil-soaked paper napkins in the center, stacking firewood on top, and igniting. Let the grill heat for about 20 minutes.

  2. Prepare the Cornbread Batter

    • In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, baking soda, and salt.
    • In a separate bowl, whisk together the buttermilk, eggs, and melted butter.
    • Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in the corn kernels or shredded cheese.
  3. Heat the Skillet

    • Place a cast iron skillet on the hotter part of the Arteflame cooktop, and add a small amount of butter, swirling to coat the skillet evenly.
    • NOTE: If you have the optional Arteflame Pizza Oven, you can use it!  Works fantastic!
  4. Cook the Cornbread

    • Pour the cornbread batter into the hot skillet, spreading it evenly.
    • Move the skillet to a slightly cooler area of the cooktop to avoid burning, and cook for about 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  5. Serve

    • Carefully remove the skillet from the grill, let it cool slightly, then slice and serve warm.

Tips

  • Preheat the Skillet: Heating the skillet before adding the batter ensures a crispy, golden crust.
  • Experiment with Add-Ins: Try adding jalapeños, cheddar cheese, or honey to enhance the flavor.
  • Serve Immediately: Cornbread is best served fresh and warm right off the grill.
