Ingredients:

For the Brined Wings (Optional):

  • 1/2 cup kosher salt
  • 3 tablespoons light brown sugar
  • 2 garlic cloves, smashed
  • 1 teaspoon whole black peppercorns
  • 1 bay leaf
  • 3 pounds chicken wings, tips discarded and wings split
  • Water as needed for the brine

For the Dry Rub:

  • 1/4 cup dark brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup sweet paprika
  • 1 tablespoon kosher salt
  • 1 tablespoon granulated onion
  • 3/4 tablespoon black pepper
  • 1/2 tablespoon dry sage
  • 1/2 tablespoon dry mustard
  • 1/2 tablespoon ground ginger
  • 1/2 tablespoon cayenne pepper
  • Canola oil for brushing
  • Lime wedges for serving (optional)
Directions:
  1. Brine the Wings (Optional): In a large saucepan, combine the brine ingredients with 2 quarts of water and bring to a boil. Cook until the sugar and salt dissolve. Let cool to room temperature. Submerge the chicken wings in the brine, cover, and refrigerate for 3 hours or overnight.
