Traditional Cheburek Recipe: Crispy and Flavorful Fried Meat Pastry

Cheburek is a traditional dish enjoyed in many Eastern European and Central Asian countries, consisting of a crispy, fried pastry filled with seasoned meat. This savory treat is perfect for grilling or frying on your Arteflame flat cooktop. The combination of tender ground meat and a crispy shell makes it irresistible!

Ingredients

Dough:

  • 3 ½ cups all-purpose flour
  • 1 cup water
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt

Filling:

  • 1 lb ground beef or lamb (or a mix of both)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • ¼ cup water
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (optional)
  • Butter for cooking (or vegetable oil if preferred)

Instructions

Step 1: Prepare the Dough

  1. Mix the flour and salt: In a large bowl, combine the flour and salt. Gradually add the water and vegetable oil.
  2. Knead the dough: Mix until the dough comes together. Knead for 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Step 2: Prepare the Filling

  1. Combine the meat and spices: In a separate bowl, mix the ground meat with the diced onion, garlic, cumin, paprika, salt, and pepper. Add the water to make the mixture juicy. Optionally, mix in fresh parsley for an extra burst of flavor.

Step 3: Shape the Cheburek

  1. Divide the dough: After the dough has rested, divide it into small balls, roughly the size of a golf ball.
  2. Roll the dough: Roll out each dough ball into a thin circle, about 6-7 inches in diameter.
  3. Fill the cheburek: Place 2-3 tablespoons of the meat filling on one half of the dough circle, spreading it evenly but leaving the edges clear.
  4. Seal the cheburek: Fold the other half over the filling, creating a half-moon shape. Press the edges with a fork to seal.

Step 4: Cook the Cheburek

  1. Preheat your Arteflame grill: Fire up the grill and let it heat for about 20 minutes. Ensure the flat cooktop is ready for frying.
  2. Cook on the flat cooktop: Melt butter (or use vegetable oil) on the flat cooktop and place the cheburek onto the hot surface. Cook each cheburek for 3-4 minutes on each side until golden brown and crispy.
  3. Remove from heat: Once done, remove the cheburek from the grill and let it rest on a paper towel to drain any excess oil.

Step 5: Serve

Serve your crispy cheburek hot, with a side of sour cream or a fresh salad for a complete meal!

Tips for the Best Cheburek

  • Make sure your grill is hot enough to get a perfectly crisp crust.
  • Adding water to the meat filling ensures a juicy center when cooked.
  • You can experiment with lamb, beef, or even a mixture of the two for different flavor profiles.

Variations

  1. Cheese Cheburek: Add shredded cheese along with the meat filling for a cheesy twist.
  2. Vegetarian Cheburek: Use a mixture of sautéed mushrooms, onions, and spices instead of meat.
  3. Spicy Cheburek: Add a pinch of red pepper flakes or diced chili peppers to the filling for a spicy kick.
  4. Herb Cheburek: Add a variety of fresh herbs such as dill, cilantro, or mint to the meat mixture.
  5. Chicken Cheburek: Swap out the beef or lamb for ground chicken for a lighter version.

Best Pairings

  • A fresh cucumber and tomato salad
  • Sour cream or tzatziki for dipping
  • Pickled vegetables for a tangy contrast
  • Sweet black tea or a light beer for beverages
