Ingredients
2 pounds ground pork (80/20 blend)
1 cup roasted and peeled New Mexico green chiles, chopped
1 tablespoon garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon cracked black pepper
1/2 teaspoon red pepper flakes (optional for heat)
1 tablespoon cold water
Butter (for the griddle)
Sausage casings (natural hog casings, soaked and rinsed)
