Grilled Candied Orange Peel on the Arteflame Grill

Grilled Candied Orange Peels with Sugar Coating

Introduction

Candied orange peel is a sweet, chewy treat made by simmering orange peels in sugar syrup. This version uses the Arteflame grill to give the peels a subtle smoky flavor before they are candied, adding depth to the sweetness. Perfect for snacking, garnishing desserts, or adding to holiday baking!

This is a great "after dinner" desert served with coffee and after dinner drinks!  Start grilling these before you start grilling your meal, that way these will be ready when you want them.

Ingredients

  • 4 large oranges (preferably organic)
  • 1 1/2 cups sugar
  • 1 cup water
  • 1/4 cup sugar (for coating)

Instructions

Step 1: Fire Up the Arteflame Grill

Light the Arteflame grill using vegetable oil-soaked napkins and firewood. Let the grill heat for about 20 minutes until the flat cooktop reaches medium heat.

Step 2: Prepare the Orange Peels

Peel the oranges, leaving as much pith (the white part) on the peel as you can. Cut the peels into thin strips, about 1/4 inch wide.

Step 3: Grill the Orange Peels

Place the orange peels directly on the flat cooktop of the Arteflame grill. Grill for 2-3 minutes on each side, allowing the peels to lightly char and soften, developing a smoky flavor. Remove and set aside.

Step 4: Make the Sugar Syrup

In a grill-safe saucepan, combine the 1 1/2 cups of sugar and 1 cup of water. Place the saucepan on the outer edge of the grill where the heat is low, and stir occasionally until the sugar dissolves. Bring the syrup to a gentle simmer.

Step 5: Candy the Orange Peels

Once the sugar syrup is ready, add the grilled orange peels to the saucepan. Simmer the peels in the syrup for about 40-50 minutes, stirring occasionally, until they become translucent and tender.

Step 6: Dry and Coat the Peels

Using tongs, remove the orange peels from the syrup and place them on a wire rack to cool and dry for 1-2 hours. Once the peels are dry but still sticky, roll them in the remaining 1/4 cup of sugar until fully coated.

Step 7: Serve

Once the candied orange peels are coated in sugar and fully dried, they’re ready to be enjoyed. Store in an airtight container at room temperature for up to two weeks.

Tips

  • Boil the Peels First: If you prefer less bitterness, you can boil the orange peels in water for 5 minutes, drain, and repeat the process once before grilling them.
  • Zest Before Peeling: Save the zest from the oranges for other recipes before peeling to make the most of your oranges.
  • Extra Flavor: Add a pinch of cinnamon or dip the finished candied peels in melted chocolate for a gourmet touch.

Variations

  1. Lemon or Lime Peels: Use lemon or lime peels instead of orange for a tart variation.
  2. Spiced Orange Peels: Add a cinnamon stick or cloves to the syrup for a spiced version.
  3. Chocolate-Dipped Candied Peels: Once candied, dip half of each orange peel in melted dark or white chocolate.
  4. Citrus Mix: Mix different citrus peels like grapefruit, lemon, and lime for a variety of flavors.
  5. Herb-Infused Candied Peels: Add rosemary or thyme to the syrup for an aromatic twist.

Best Pairings

  • Desserts: Use the candied orange peels to garnish cakes, cookies, or ice cream for a burst of citrus flavor.
  • Drinks: Serve with tea, coffee, or cocktails like a classic old fashioned, using the peel as a garnish.

Conclusion

Grilled Candied Orange Peels on the Arteflame grill bring a delightful balance of sweet, smoky, and tangy flavors. They make the perfect treat for snacking, baking, or gifting during the holidays.
