Fettuccine Alfredo Grilled on the Arteflame Grill

For the Fettuccine:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste

Garnish:

  • Fresh parsley, chopped
  • Extra grated Parmesan cheese

Instructions

Preparation

  1. Cook the Fettuccine: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to the package instructions until al dente. Drain and set aside.

Preparing the Alfredo Sauce

  1. Heat the Sauce Ingredients: Put a large skillet on the flat cooktop and melt the unsalted butter. Add minced garlic and sauté until fragrant, about 1 minute.

Place the chicken on the center grill grate for a quick sear.  Once seared, move the chicken to the flat cooktop.  Cook for about 5-6 minutes on each side, or until fully cooked and the internal temperature reaches 150°F (74°C). Remove from the grill, let rest for a few minutes, and then slice into strips.

Combining the Ingredients

  1. Grill the Fettuccine: Place the cooked fettuccine directly on the flat cooktop. Drizzle with olive oil and toss to coat. Cook, stirring occasionally, until the pasta is lightly charred and heated through, about 5 minutes.
  2. Add the Sauce: Pour the Alfredo sauce over the grilled fettuccine and toss to combine. Allow the sauce to coat the pasta evenly, warming for an additional 2-3 minutes on the grill.  Don't pour on all the sauce, only pour on enough to coat the fettuccini.

Serve

  1. Plate the Dish: Remove the pan from the grill. Serve the fettuccine Alfredo on plates, topping with the grilled chicken strips if using.  Pour the rest of the sauce over the fettuccine to taste.
  2. Garnish: Sprinkle with fresh chopped parsley and extra grated Parmesan cheese for added flavor and presentation.
