Introduction
This Skillet Cornbread is a deliciously moist, golden-brown bread with a crisp edge and tender crumb, perfect for pairing with any holiday meal. Cooked on the Arteflame in a cast iron skillet, this cornbread gains a slightly smoky flavor, with butter adding richness to every bite.
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup melted butter (plus extra for greasing)
- Optional: 1/2 cup corn kernels or shredded cheddar cheese

Prepare the Arteflame Grill
Light up the Arteflame grill by placing three vegetable oil-soaked paper napkins in the center, stacking firewood on top, and igniting. Let the grill heat for about 20 minutes. -
Prepare the Cornbread Batter
- In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in the corn kernels or shredded cheese.

Heat the Skillet
- Place a cast iron skillet on the hotter part of the Arteflame cooktop, and add a small amount of butter, swirling to coat the skillet evenly.

Cook the Cornbread
- Pour the cornbread batter into the hot skillet, spreading it evenly.
- Move the skillet to a slightly cooler area of the cooktop to avoid burning, and cook for about 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

- Carefully remove the skillet from the grill, let it cool slightly, then slice and serve warm.
