  • 2 garlic cloves, crushed
  • 1 Tbsp. fresh lemon juice
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions:

  1. Prepare the Squash:

    • Cut the neck off the squash, reserving the base for another use.
    • Remove the stem and peel the neck. Resting the neck on its cut base, cut it in half lengthwise to create two lobes. Trim the rounded sides to form two ¾"-thick steaks (about 6 oz. each). Reserve the trimmings for another use.
  2. Grill the Squash Steaks:

    • Preheat the Arteflame grill. Brush the squash steaks with olive oil.
    • Grill each steak, turning every 3 minutes, until deeply browned on both sides and fork-tender, about 15 minutes total.
  3. Make the Brown Butter Sage Sauce:

    • Place a skillet on the Arteflame plancha and add butter, sage, and garlic.
    • Tilt the pan to pool the butter on one side and continually baste the steaks with the butter using a large spoon.
