Introduction

Discover the art of grilling spatchcock chicken with our Arteflame grill recipe. This technique ensures your chicken cooks evenly, resulting in juicy meat and perfectly crispy skin. It's a foolproof method for a spectacular outdoor feast.

Ingredients

  • 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Fresh herbs for garnish (such as rosemary or thyme)

  • Meat scissors or a sharp knife
  • Meat thermometer

Instructions

  1. Prepare the Chicken:

    • Remove the chicken from the packaging and pat it dry with paper towels.
    • Place the chicken breast-side down. Using meat scissors or a sharp knife, cut along each side of the backbone and remove it. Turn the chicken over and press down firmly on the breastbone to flatten it.
    • Rub the chicken all over with olive oil. Mix salt, pepper, paprika, garlic powder, and onion powder, and sprinkle it evenly over both sides of the chicken.
  2. Preheat the Arteflame Grill:

    • Heat up your Arteflame grill.  You can use the Arteflame Rotisserie for this recipe which will work great.  Alternatively, use the grill grate to quickly sear the chicken, then move it to the flat cooktop.
  3. Grill the Chicken:

    • Place the chicken skin-side down on the grill grate for a quick sear.  Then grill the chicken on the flat cooktop for about 10-15 minutes, or until the skin is golden and crisp.
    • Carefully flip the chicken and continue cooking for another 30-40 minutes, or until a meat thermometer inserted into the thickest part of the thigh reads 150°F.
    • NOTE: Remember; the chicken will keep cooking after you take it off the grill.  Take it off early so you don't over cook it!
  4. Rest and Serve:

    • Let the chicken rest for 10 minutes before carving. Garnish with fresh herbs if desired.
