Grilled Butternut Squash with Spicy Onions Recipe

Ingredients:

For the Spicy Onions:

  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon finely grated lime zest
  • ¼ cup fresh lime juice
  • 2 teaspoons honey

For the Assembly:

  • 1 cup blanched hazelnuts
  • 2 large butternut squash (about 4 lb.), peeled, seeded, sliced ¼” thick
  • ¼ cup plus 2 Tbsp. olive oil
  • Kosher salt and freshly ground black pepper
  • ½ cup chopped fresh flat-leaf parsley
  • ½ cup chopped fresh mint
  • 2 tablespoons chopped fresh marjoram
  • 4 oz. fresh goat cheese, crumbled

Instructions:

  1. Prepare the Spicy Onions:

    • Heat up the Arteflame grill and pour olive oil over the side plancha on medium-high heat.
    • Grill the red onion, stirring often, until lightly charred and softened, about 5-7 minutes.
    • Add red pepper flakes and toss to combine.
    • Off the heat, mix in lime juice and honey in a bowl. Let cool, then stir in lime zest.
  2. Toast the Hazelnuts:

    • On a medium-high heat area of the grill, toast hazelnuts until golden brown, about 6-8 minutes. Let cool and coarsely chop.
  3. Grill the Butternut Squash:

    • Toss butternut squash with ¼ cup olive oil; season with salt and pepper.
    • Grill until tender and caramelized, about 15-20 minutes.
  4. Assemble the Dish:

    • Return the grilled squash to a bowl. Add the toasted hazelnuts, parsley, mint, marjoram, and spicy onions. Toss to combine.
  5. Serve:

    • Transfer the squash mixture to a serving platter.
    • Crumble goat cheese over the top and drizzle with the remaining 2 Tbsp. olive oil.
