Grilled Pizzettes on the Arteflame Grill

Grilled Pizzettes with Mozzarella and Tomato

Introduction

Grilled pizzettes are mini pizzas made on the grill, giving them a crispy, charred crust with a delicious smoky flavor. These small, personal-sized pizzas are perfect for gatherings, allowing everyone to customize their toppings. The Arteflame grill’s high heat ensures a perfectly crisp bottom and melted toppings every time.

Ingredients

For the Dough:

  • 1 lb pizza dough (store-bought or homemade)
  • 1 tbsp olive oil (for brushing)

Topping Ideas:

  • Tomato sauce
  • Fresh mozzarella, sliced
  • Grated Parmesan or pecorino
  • Fresh basil leaves
  • Pepperoni slices
  • Mushrooms, sautéed
  • Red onion, thinly sliced
  • Cherry tomatoes, halved
  • Arugula (for garnish)
  • Balsamic glaze (optional for drizzling)

Instructions

Step 1: Fire Up the Arteflame Grill

Light the Arteflame grill using vegetable oil-soaked napkins and firewood. Let the grill heat up for about 20 minutes until the flat cooktop reaches high heat, ideal for pizza.  If you have the optional Arteflame Pizza Oven, insert the pizza grate and put the oven on the grill.

Step 2: Prepare the Dough

Divide the pizza dough into small portions (about 4-6 pieces) and roll them out into mini pizza rounds about 5-6 inches in diameter. Lightly brush both sides of each pizzette with olive oil.

Step 3: Grill the Dough

Place the dough rounds directly on the flat cooktop of the grill. Cook for 2-3 minutes on one side until bubbles form and the bottom is lightly charred. Flip the dough and grill for another 2 minutes.

Step 4: Add Toppings

Once the dough is slightly charred and crisp, add your desired toppings. Spread tomato sauce, place mozzarella slices, and sprinkle Parmesan or other toppings on each pizzette.

Step 5: Melt the Toppings

Move the pizzettes to the outer edge of the grill, where the heat is more moderate. Cover them with a metal bowl (if you have one) to help the cheese melt. Grill for an additional 4-5 minutes until the cheese is melted and bubbly.

Step 6: Serve

Remove the grilled pizzettes from the Arteflame grill. Garnish with fresh basil, a drizzle of balsamic glaze, or arugula if desired. Serve immediately while hot and enjoy!

Tips

  • Crispy Crust: For a super crispy crust, make sure the grill is hot before placing the dough on the cooktop.
  • Topping Variations: Add toppings sparingly to avoid weighing down the pizzettes, which can make them soggy.
  • Homemade Dough: If you have time, make your own pizza dough for a fresher taste.

Variations

  1. Margherita Pizzette: Classic toppings of tomato sauce, fresh mozzarella, and basil, with a drizzle of olive oil.
  2. BBQ Chicken Pizzette: Top with BBQ sauce, grilled chicken, red onion, and cilantro.
  3. Vegetarian Pizzette: Use sautéed mushrooms, spinach, and cherry tomatoes, with a sprinkle of goat cheese.
  4. Spicy Pepperoni Pizzette: Add sliced pepperoni, red pepper flakes, and a mix of mozzarella and cheddar cheese.
  5. Pesto Pizzette: Replace tomato sauce with basil pesto and top with mozzarella and sun-dried tomatoes.

Best Pairings

  • Side Dishes: Serve with a fresh Caesar salad, garlic bread, or a light arugula salad to balance the rich flavors of the pizzettes.
  • Drinks: Pair with a cold beer, sparkling water, or a glass of chilled rosé.

Conclusion

Grilled pizzettes on the Arteflame grill are a fun and flavorful way to enjoy mini pizzas with a crispy, charred crust. Whether you stick to classic Margherita toppings or get creative with different combinations, these pizzettes are perfect for any gathering.
